Is there a way to see # of client stats hour-by-hour? We have two public SSIDS and want to start tracking how many people are using them in overnight hours, like the client stats in the summary report.

You should be able to get an indication from the Location Heatmap on the wireless menu, but if you want more detail then you’ll need to look at getting the information from the Dashboard API. Using the API endpoint networks/{networkId}/wireless/clientCountHistory should get you what you want.
