Based on my experience, you should stick to the second document -> Sizing Guide. This one is much more accurate. Especially, take a look at which feature in use impacts performance the most. Btw.: 750 MBit for a MX85 isn't really that bad.

Is there any specific reason why your branch is not a separate network within your Org? This would make your life a lot easier when it comes to using AutoVPN and all of its beauties. If it really needs to be 3rd party VPN, https://documentation.meraki.com/MX/Site-to-site_VPN/Tag-Based_IPsec_VPN_Failover could prove useful for you.

In case your clients could build up the VPN themselves (Remote Access VPN), Meraki absolutely supports this by using one of the industry "standards" by running AnyConnect.

I‘d assume that the Netflow implementation isn‘t different between Hardware models. Guess the best option is filing a case with support (and letting us know the outcome 😁).

As far as I got you right: yes, that's completely possible. vMX and on prem MX would form an AutoVPN tunnel, whereas you'd configure RAVPN on your "regular" MX and send the remote access traffic through that tunnel.
