WAN1=ISPA WAN2= ISPB now MG41

I currently have 2 ISPs connected to WAN1 and WAN2.

Recent fiber cut  left the network without Internet for 26 hours.

I understand network fiber diverse pathing however this was catastrophic and a once in a very not so often event.

Can the the MG41 with 2 ethernet connections be added to my MX250 1 gig interfaces ( GbE 3-10) ?

No, at least you won't have any effect. Outgoing traffic has to go out over both WAN ports. Of course you could use one of MG41s ethernet interfaces e.g. for WAN2.

There is one extreme option.

You can buy an additional MX (and put it into a different network).  I'll call this the edge MX.

Plug WAN2 of your main MX into the LAN of the edge MX.

Now you have two more WAN ports for failover.  You can plug in your backup fibre and backup 4G into the edge MX.
