Like everyone else there is a concern regarding Mac clients and the UUID.
100% or our Macbooks only use wireless.
I noticed that Mac Minis and when my Macbook is connected to an MS switch via ethernet the Proper name appears in the dashboard.
Has anyone else discoved this?
Any ideas if it is a MACOS wifi client issue or a knob in my SSID that needs to be turned?

This is most likely due to Apple (and Android for that matter) is using randomised MAC addresses, https://documentation.meraki.com/General_Administration/Cross-Platform_Content/Meraki_and_iOS_14_MAC...
The only way around this is to disable randomised mac addresses on the client itself.
Or, if the Macs are enrolled in Systems Manager, you could push the setting out with a WiFi profile.
The issue is on Macbooks (laptops) not Mobile devices. The Mac address is not randomized.

Are you sure? Afair, It's enabled by default on all Macbooks, and available to disable unless the device is MDM enrolled... I might be incorrect here, though..

Afair = As far as I recall..
I think that Private MAC address/MAC address randomisation is enabled by default on Apple Macs, and cannot be disabled unless the device en MDM enrolled, and a profile is pushed to it, to disable Private MAC address.
I am searching for how to set this value outside of using the MDM. Are you are of any CLI command line shell on MACOS?
our MDM is KANDJI. They say the issue is how MERAKI orders the device identification.
The Device on LAN identifies correctly. MACOS host name
The Device on WIFI identifies as the UUID.
I believe this occurred either with the latest MACO OS upgrades or Migrating to KANDJI from JAMF
