How can I see a log, to see the proper functioning of the outbound L3 rules

Hi community, the purpose of the rules is only to allow network traffic to anti-spam 172.16.16.60 and WebMAil 172.16.16.59, blocking all other SMTP queries. My question is how can I verify that it is not blocking important traffic. Some of the origin and destination.
 
I appreciate your help.

I guess you would need to send this information to a syslog server to get full visibility of whats happening and action based on findings.
