We are deploying Cisco 9166 AP's that are WiFi6E - I know this is a very open and subjective question but want to see what others have set for the 6Ghz Radio
If your WLAN design allows it, I would try to go for 40 MHz channels on 5 GHz. With similar power your clients could all end up on 6 GHz and 5GHz would be underutilized.

Also keep in mind that 6Ghz runs in low power mode until you enable AFC, which requires that at least one AP in the network has a GPS USB module that has a valid GPS fix, and only if they are located in the USA or Canada.
In the UK the power levels cannot go very high, see below where I tried to get more power out of this CW9166i, but the limit for this channel and channel width is only 18dBm
