Your network is like a field of sheep and a VLAN is like having a Border Collie that knows to pick out and gather certain sheep together. Add another sheep and the Border Collie looks at a tag on that sheep and figures out which group it goes into. Why would you do that? Well, maybe some sheep have great wool or know how to make a call on a VoIP phone. Others are more tasty and should only talk to file servers.
