Not the best option - but you could get a trial of some different MV cameras: https://meraki.cisco.com/form/trial/ Get a long Ethernet cord and try manually placing them in a few places to get a feeling for their capabilities (most video quality at different ranges and their coverage). Once you have that experience, you'll be able to work out quantities and placements in advance.
