We're migrating to the Cisco Community on March 29. The Meraki Community will enter read-only mode starting on March 26.
It seems that there isn't a way in the Meraki Dashboard to view which email the Sponsored Guest client used to register for the Wi-Fi.
We can only view the Authoriser when viewing through the client page.
Is there any way through API?

No, this is not available in the dashboard via GUI or API.
If this is a requirement, you might need to investigate 3rd party options to integrate into the guest access workflow
