Additional SSID's on a single AP on a network.

On one of my networks I have about 60 AP's with two SSID's on each them.  I would like to add a third guest SSID to one of the AP's but not the other 59.  Is this possible without isolating that specific AP and putting it on it's own network?

Yes, this is commonly done, using AP tags, to choose which APs the SSID is advertised by:   https://documentation.meraki.com/MR/Other_Topics/Using_Tags_to_Broadcast_SSIDs_from_Specific_APs
