The fixed IP address doesn't remains fixed.

The issue is only seen with Apple products, while making IP address fixed in Client portal, it tends to drift away to dynamic. The appliance we are using is MX250.

Try turning off the mac randomisation feature on the Apple device and see if that allows your static IP to stay fixed.

You can turn off mac randomisation for just the SSID you are having the issue with.
