Is there anyway to define subnets in MX without VLANs?

if i create subnets in Security Appliance with different VLAN and placed unmanaged switches in front of every subnet will this work for me?

Yes. You just need to set the MX's ports to "Access" mode and specify the VLAN (so subnet) you want for that port. Outside of the MX nothing needs to know about the VLAN ids you chose.
As people have said - you must use VLAN's
There is no equivalent of port mirroring or subnet shields in Meraki world.
But for you usage, you can put switches on each port and you'll be fine 🙂
