The "Guest Network" feature actually does not create a separate WiFi network but rather enables the Client Isolation feature.
Client isolation sets up a local firewall that prevents users on the network from communicating with anything on else on the local network, including other guests, local network resources, printers, security devices, and any other networked resources. Users on a network with Guest network enabled will essentially only be able to reach the internet (unless there is explicit routing enabled).
If you were looking to have a separate network that your guests or customers can use and not congest your primary network, you would need to create a secondary WiFi network. In doing this, you will be able to manage both WiFi networks independently and adjust settings based on the needs of each network. On the secondary network, you might consider turning on the "Guest Network" mode to enable client isolation to prevent clients from communicating as this recommended for best-practice user security.
