I've seen that the data of the accelerometer of CW91x APs is available in the dashboard :

This is wonderful ! Do we know if this data is available via API ?

I can't find anything in the Meraki API documentation https://developer.cisco.com/meraki/api-v1/overview/, and I don't have yet a Wi-Fi 7 AP to do the testings,

The  API does not yet expose the accelerometer or motion sensor data from CW91x access points. It is not documented in any of the current official API endpoints.

If the AP reports movement as an event (like "Device Movement Detected"), it could be captured by webhooks.

If you wish, you can submit a feature request directly from the Meraki Dashboard.
