On the Client page, there is a column named "Description".

I name each employee's mobile device but over times it changes to the mobile device's MAC address.

Anyone know why this happens?

Do the affected client devices have MAC randomization set?

If you download from Dashboard a list of current clients that you've named together with current MAC, see if the client MAC changes when the name is 'lost'.

That's it, iPhones but it's funny how some don't change at all it seems.

Client description is basicly the name of the client.  The info is generated in that order : User-specified Name, MDNS Name (Bonjour), NetBIOS Name, DHCP Hostname. 

The only way that it could change after you manually set it , is exacly what sungod is refering to.
